Sous Vide Spicy Dilly Green Beans

I absolutely love pickles… any and all kinds of pickles in all shapes and sizes! Dill pickles, Bread and Butter, Spicy Sweet Pickles, Spicy Dill Pickles, and my newest addiction is Spicy Dilly Green Beans. You can find them in grocery stores, but my favorites can always be found at almost every farmer’s market.

I happily researched lots of versions of these spicy green bean picked and came up with my own. I hope you’ll like them too!


Sous Vide Spicy Dilly Green Beans


1 - 1 1/2 lb whole Green Beans, trimmed

1 1/4 cups White Vinegar

1 1/4 cups Water

1 1/2 TB Pickling Salt

5 Garlic Cloves, roughly chopped

2 Dried Red Peppers

1 tsp Dill Seed

4- 6 sprigs fresh Dill Leaves

1 1/2 tsp Mustard Seeds

1/2 tsp crushed Red Pepper


  1. Divide ingredients in half between 2 pint size jars- garlic, dill seed, mustard seeds, dill leaves, and red peppers.

  2. In a medium bowl mix in water, salt, and vinegar till salt dissolves.

  3. Place green beans, onions and garlic in jar. I always try to add as many green beans as I can almost like Tetris. Pour brine over the top.

  4. Place the lids on top of the canning jars and finger tightened. Don’t tighten too much as air will need to escape to seal properly. Add water to your Sous vide container to within a 1/2” of the top of the jars.

  5. Lower jars into the Sous vide cooker and heat up to 154’. Set the timer for 2 hours.

  6. Remove from the bath when cooked. Allow to come to room temperature before storing in the refrigerator.
