Lower Carb Ginger Chicken Soup


A few months ago I visited the local VFW for their Soup Sale. I was able to stock up on some soups made by members and their families. My favorite one was this Ginger Chicken soup that was so delicious and had such a great flavor to it. I reached out to the perosn that made it and was able to get a base recipe. She said it's really good for helping you feel better too if you're under the weather. I added my spin on it and created this really bright tasty soup, that I can't seem to stop eating.


5 Green Onions, sliced tops and bottoms separated

1/2 c Ginger, slivered

1/2 c Carrots, matchstick

1/2 c Celery, finely chopped

1 tsp Garlic Paste or crushed

2 TB Sesame Oil

1/4 - 1/2 tsp Red Pepper flakes

5 1/2 c Chicken Broth

2 tsp Better than Bouillon Chicken

2 TB Fish Sauce

Pinch of sugar

1/2 c cooked Jasmine Rice

2 hand fulls Celery leaves, sliced into strips

1 1/2 c cooked Chicken, shredded

1/2 Lime, juiced


  1. In a large Dutch oven sauté carrots, celery, white part of green onions, ginger, garlic paste, and red pepper flakes in Sesame Oil. Sauté for 3-4 minutes.

  2. Add chicken broth, BTB, fish sauce, pinch of sugar, and cooked rice.  Bring to boil and simmer for 10 minutes.

  3. Add celery leaves and simmer for 10 more mins.

  4. Add cooked chicken and lime juice simmer for 3-4 mins just warm up the chicken.

  5. Can serve topped with the green onions fresh slivered ginger if you choose.
