Low Carb Steakhouse Soup

Who doesn’t love a good Steak dinner? Smothered with carmelized onions and sautee’d mushrooms with that delicious grilled beef flavor. This is a great way to get that rich deep flavor in one hearty bowl. This is a really easy and quick dinner when you don’t have a lot of time. It can easily be prepped ahead of time to be thrown together and cooked in about 30 mins, especially when using ground beef.
My whole family liked this soup and of course you know how much I like kohlrabi in soups as a substitute for potatoes. I hope you and your family will enjoy this as much as mine did!
TIP:
-A good tip when slicing steak thinly is to slice it when it’s partially frozen. This allows for more uniform cuts and cooking time, it also prevents the meat from sliding around when you’re trying to cut it.
-Also cutting against the grain helps it to be more tender
-You can also use a chuck steak, but will need to simmer it longer in the beef broth by itself prior to adding any other ingredients.
Steakhouse Soup
1.5 lbs Ribeye Steak, sliced or diced (or Ground Beef). You can also use a chuck steak, but will need to simmer it longer by itself
1 large Onion, chopped
1 cup, Kohlrabi, peeled and diced
1/2 - 1 pint Cremini Mushrooms, sliced (or whichever kind you like)
4-6 cups Beef Broth
2 tsp Better than Bouillon Beef Base
2 tsp Better than Bouillon Mushroom Base
1 tsp dried Thyme
1/2 tsp Black Pepper
Olive Oil
Sear steak or brown ground beef in large pot, remove from pot drain fat and set beef aside
Add olive oil, mushrooms and onions and sauté till soft
Add beef broth and bring to high simmer/ low boil
Add Beef, Kohlrabi, Beef and Mushroom BTB base, thyme, and pepper
Bring to a simmer again and cook for 15-20 mins till Beef and Kohlrabi are tender
Salt to taste, but be careful to not oversalt.
