
Many times the best dishes are created out of what I have on hand and putting ingredients together. This soup was created in the spur of the moment along with wanting to try the Kinder’s Seasoning Taco Blend. The Taco Blend brings a light Smokey flavor to the soup that I really enjoy.
Another nice addition that I only just recently found is Vegeta all purpose seasoning. It has turned out to be a game changer for some dishes just taking them up a notch with a nice addition to the background.
Vegeta is an all purpose seasoning from Europe that is made of dehydrated vegetables and spices. It comes with or without MSG. Vegeta is not necessary to this soup, but it sure does taste good with it. I’ve tried it with and without this seasoning, but I prefer it added in. I was able to find it on Amazon.
Low Carb Smokey Southwest Pork Soup
1lb ground Pork
1 pkg Kinder Seasoning Taco Blend
3 c Chicken Broth
1 can Rotel Original Tomatoes
1 Petite Diced Tomatoes
1 can Southwest Corn
1 small Onion, chopped
2 Garlic Cloves, crushed
1 tsp Better than Bouillon (BTB) Chicken flavor
1 tsp Vegeta All Purpose Seasoning
1/2 tsp Crushed Red Pepper
1/2-1 tsp Weber Roasted Garlic and Herb Seasoning
1 Lime
Optional:
Finely sliced raw cabbage for topping
Sliced Jalapeños
In a skillet brown Ground pork till no longer pink.
While pork is cooking, place the following ingredients in a medium stockpot: Rotel tomatoes, diced tomatoes, chicken broth, corn, onion, garlic, BTB chicken flavor, Vegeta seasoning, garlic seasoning, and crushed red pepper. Bring to a low boil.
Let simmer for 15 mins or till onions are slightly translucent.
After browning the ground pork, add the Kinder Taco Blend seasoning and about 1/3 cup of water in the skillet. Cook down water a bit. Then add seasoned pork to the stock pot.
Let that simmer together for 10 mins
Finally remove from heat.
Add a squeeze of lime juice to add brightness to your soup.
You can place finely sliced cabbage in the bottom of your bowl and the heat from the soup will cook it slightly and add texture.
You can also add some sliced jalapeños for some extra kick.
