Lower Carb Chicken Ramen Soup

Yes…. It’s another soup recipe… I know, I know…. I’ve already confessed to you my deep love for soup. I love the deep rich flavor of a hearty Ramen soup with chewy ramen noodles, but don’t love the carbs that come with it. This dish only takes about an hour to make from prep to bowl. The Carba-nada noodles are a very satisfying substitute for regular noodles. The al Dente texture is very similar to Ramen noodles. I like using celery leaves in soups for the added subtle flavor to the broth and texture. I bought a big bunch of celery from the farmers market with a ton of leaves So I had plenty to use.

2 tsp Sesame Oil

1 large clove Garlic, minced

2 tsp Ginger minced or grated

1/8 cup Carrot, shredded

1/8 cup Celery, finely chopped

Pinch crushed Red Pepper

1 1/2 TB Soy Sauce

1 1/2 TB Rice Wine Vinegar

1 tsp Worcestershire Sauce

5 cups of Water (or chicken broth)

1 level TB Better than Bouillon Chicken (use less if using chicken broth instead of water)

1 Green Onion, finely sliced, white and green halves separated

1/2 oz. dried Shiitake mushroom, sliced into thin slices

1 cup Celery leaves, roughly chopped

2 oz Al Dente Carba-Nada noodles or 1 package of Shirataki noodles which is virtually no carbs.

1/2 cup Cooked Chicken, shredded


  1. Heat Sesame oil in large pan.

  2. Add garlic, ginger, carrot, celery, and crushed red pepper (be careful how much you add as the heat spread as it cooks).

  3. Sauté for 2-3 minutes.

4. Add soy sauce, rice vinegar and Worcestershire sauce. Sauté for 1 minute.

5. Add water, chicken bouillon and the white part a green onion. Bring to boil. Turn heat to medium and simmer for 5 minutes.

6. Add dried mushrooms and celery leaves. Simmer for additional 10 minutes.


7. You can add water at this point of the liquid has cooked down too much or if the flavor seems too intense.

8. Add Al Dente Carba-Nada noodles and shredded chicken cook 3-4 minutes.

9. Add the green onion slices and Serve.
