Low Carb White Chocolate Macadamia Nut Biscotti


1 cup Superfine Almond Flour

1/3 cup Swerve Confectioners

1 tsp Baking Powder

1 tsp Arrowroot Powder

1/2 tsp Vanilla Extract

1/2 cup Nuts, Macadamia

1/3 cup salted Butter, melted

2 Lrg Eggs

1/2 - 3/4 cups Sugar Free baking or melting chips, White Chocolate


1. Preheat oven to 325°F. Line a baking sheet with parchment paper.


2. Combine almond flour, confectioners Swerve, baking powder, arrowroot powder, vanilla extract, and nuts. Mix well until combined.


3. In a separate bowl, beat the melted butter and eggs together.


4. Slowly add egg mixture to dry ingredients, mixing until a dough forms. May need to add a touch more almond flour if dough is too wet. It will be loose, but will hold it’s form some.

5. Transfer dough to parchment paper, use rubber scraper to shape dough into an even slightly flattened, narrow rectangle shaped log.

6. Transfer dough with parchment paper onto baking sheet and bake for 30 minutes or until firm and golden brown. Remove from oven and allow to cool for about 15 -18 minutes.


7. Preheat oven to 250°F.


8. Using a sharp thin knife, slice loaf into 1/2 inch or slightly less thick slices. (If your loaf is crumbly and won’t slice, freeze it for a few minutes to firm it up).


9. Lay slices on their sides on the same baking sheet and bake for 15-18 minutes. Flip and bake for an additional 15-18 minutes.


10. Turn oven off and allow biscotti to cool in the oven until crisp and oven is cooled down completely.


11. Once completely cooled stand up side by side as close together as possible.


12. Slowly melt sugar free baking chips in the microwave until completely melted.


13. Evenly spread melted baking chips across the top of the Biscotti slices and place in fridge to cool and harden.


14. Store in airtight container.


Other flavor Options:

-Milk Chocolate and Cashew

-Maple Chocolate and Walnut: Add 1/2 tsp of maple extract to melted white chocolate and 1 tsp Maple Chocolate to dough
