Low Carb Spaghetti Squash Au Gratin


Spaghetti Squash Au Gratin! It reminds me of Hash Brown au gratin. My family really enjoys this warm or cold.

Spaghetti Squash Au Gratin.

1 med spaghetti squash

2 TB butter

½ sm yellow onion, finely chopped

¼ tsp red pepper flakes

1 tsp thyme

½ cup sour cream

2 cup shred cheddar cheese

1. Cut the squash in half and remove the seeds. Place half the squash on a microwave plate, put 1/2 cup of water in the hulled out part, top with the other half of the squash and microwave for 10 mins.

2. In a medium sized skillet over medium heat, add the butter, onions, red pepper and thyme and cook until the onions are slightly brown in color. Salt and pepper to taste.

3. Using a fork, scrape the insides of the squash and transfer to a small bowl. Combine the squash, onions, sour cream and half the cheese together and mix well.

4. Transfer the mixture to a buttered baking dish and top with remaining cheese.
