Low Carb Quesadilla with Jalapeño Pico de Gallo

These turned out really good and I love the salsa!


Low Carb Quesadilla


Low carb tortillas

-Little butter


-Steamed shrimp

-Southwest seasoned chicken strips from Aldis

-Shredded Cheddar

-Shredded Monterey Jack

-Shredded mozzarella

-sliced black olives

-green onions

-sour cream


-Cherry tomatoes, I used a medley of heirloom cherry tomatoes I love the varying flavors.

-Jalapeño

-2 TBs lime juice

-salt and pepper


1. In a bowl put chopped cherry tomatoes, minced jalapeño and lime juice. Add salt and pepper to taste. Set aside and allow it to marinate.


2. Melt butter in non-stick skillet. Lay down one tortilla sprinkle little Monterey Jack. Add desired ingredients: Chicken, olives, little pico.

Or shrimp and green onions.


3. Sprinkle with cheddar and just a little mozzarella. Top with another tortilla.


4. Once browned on one side carefully flip the quesadilla and brown the other side letting cheese melt inside.


5. Remove from heat and serve with Pico de Gallo.
