Low Carb Potsticker Soup

Updated: Dec 11, 2022

This is just a really flavorful soup! I absolutely love dumplings of all kinds... dim sum, bao soup dumplings, steamed or fried dumplings, shumai, potstickers, goyza.... you name it. When I saw a few different versions of this soup online there was no question that I had to make my own version.

The depth of flavor in the broth is what really makes this soup a keeper and the addition of a few vegetables and the potstickers make it really satisfying. This has quickly become a family favorite especially with my husband. I hope your family loves it as much as mine does!

Low Carb Potsticker Soup

1 TB Olive oil

1 TB Sesame oil

6-8 oz Shiitake mushrooms, sliced thin

2 Garlic Cloves, crushed

2 tsp freshly grated Ginger

1/2 - 1 tsp crushed Red Pepper

Salt and Pepper

4 cups Chicken  broth

4 cups Water

2 TB Chicken Better than Bouillon

3 1/2 TB toasted Sesame oil

3 1/2 TB Soy sauce

4 petite heads of Bok Choy sliced (approximately 2-3 cups)

1/2 cup matchstick Carrots

4 thinly sliced Green Onions, set aside some of the green tops

12 oz frozen Potstickers or Precooked Potstickers

Black sesame

Bean sprouts

  1. If using frozen potstickers you can add them directly to the soup in step 5 or follow directions to pan fry the potstickers and set aside.

  2. Heat the olive oil and 1 TB sesame oil in a stock pot over medium-low heat. Add in the garlic, ginger, crushed red pepper, and mushrooms. Stir and cook until the mushrooms soften, about 3 to 4 minutes. Sprinkle with a pinch of salt and pepper.

  3. Pour in the broth, water, Chicken Better than Bouillon, sesame oil and soy sauce. Bring the mixture to a simmer.

  4. Once the broth is simmering, add in the vegetables, carrots, green onions, and bok choy. Let simmer for about 10 minutes.

  5. If using frozen potstickers add them here and cook for 3 minutes (or longer, if the package directions call for it), until the potstickers are cooked through.

  6. If using precooked Potstickers place in bowl and pour hot broth over them and allow to warm up for a few minutes.

  7. Serve immediately with extra green onions, soy sauce, sesame oil, bean sprouts, and black sesame seeds for topping.

  • Note: The potstickers will begin to break down If they are left in the soup and will only last about 24 hours in the fridge.  The soup will definitely last for a more few days if the potstickers are stored separately.
