For as much as I love more adventurous dishes, I really crave down home comfort food cooking. This is an easy soup to make the most of leftover ham while delivering great flavor! Easy enough to cook ahead and reheat on weeknights or freeze for another day.
I say this is kinda low carb because I included the red potatoes. Sometimes you just need a potato and honestly there is no substitute. It’s really up to you whether you omit the potato all together or chose to add any to your bowl or not. But with or without the potato this soup has great flavor and is delicious any time of year!
Kinda Low Carb Ham, Green Bean, Potato Soup
Ingredients
2 qts Ham Broth, made from Ham Bone
2 Bay Leaves
1 medium Onion
2-3 14 oz cans Cut Green Beans
1 lb Red Potatoes skin on, cubed (or less to reduce carbs)
1+ lb Ham, cubed
1/2 tsp Garlic Powder
salt and pepper to taste
1-2 tsp dried Basil
1 tsp dried Oregano
1c thinly sliced Bella Mushrooms
1-2 TB Ham Base Better than Bouillon
1 (14-oz) can Diced Tomatoes
Directions
Boil Ham bone, ham, bay leaves, and bouillon in 2 1/2 qts of water. Or at least enough to cover everything. I boil everything for about 1-2 hours adding water as needed.
Remove bone, meat and bay leaves. Discard Bay leaves and bone and set ham aside to cool.
Add in the chopped onion, thinly sliced mushrooms, tomatoes, seasonings, and chopped potatoes cut into large pieces, but still bite size. Bring to low boil and simmer till potatoes are almost done.
Then add green beans and cubed ham. Heat through. Adjust the salt and pepper and serve
To make this soup even more low carb, omit the potato all together.
