Easy Low Carb Omelet Tomato Slices


I have a ton of summer tomatoes right now so I’m being creative and trying lots of recipes. This one is really easy, but makes for a yummy meal and even tastier breakfast sandwich throughout the week. Or even breakfast for dinner. I served it with pan fried scrapple…. Family Favorite! In the photo below I served it with crispy Maitake mushrooms and Crispy cheese chips, both are a next textural accompaniment and easy to make.




Easy Low Carb Omelet Tomato Slices

1 large Tomato sliced thick

3 eggs

Chopped Ham

Chopped Cremini Mushrooms

Chopped Green Onions

Cheddar Cheese

Salt and Pepper

Favorite Seasonings

Optional: serve on toast, add salsa, add Bacon for an egg BLT


  1. Slice tomato into thick slices. Remove center of tomato slice till just the outside ring is left. Chop the center of the tomato slices and set aside.





2. Beat the 3 eggs in a medium bowl.

3. Add whatever ingredients you like in your omelets. I added chopped Ham, mushrooms, green onions, the center of the tomato slices, and salt and pepper. Mix well.

4. Please the tomato rings on a hot griddle or non stick skillet. Pour your omelet mix into the ring just to the top of the tomato slice.


5. You can cook a regular omelet of you have any egg mix left over.

6. Cook on one side for a few minutes. Add cheddar cheese and then flip cooking for a few minutes till done.



7. You can eat it just like this or make a yummy breakfast sandwich with it. Soft white bread, micro greens and mayonnaise makes a delicious combination.
