I absolutely love soup any day any time! This is a basic Chicken soup. It turned out really good! The only thing missing is the best part drop dumplings!
I’m going to try and see if I can make a low carb version. I will share if I figure it out.
Chicken Soup
2-4 chicken leg quarters
1 32oz carton chicken broth
1-2 stalks celery and leaves, chopped
1 small onion
Shredded carrots
Sliced small Bella mushrooms
2 cups of sliced cabbage
Some chopped Kale
Some frozen white corn (I know it has some carbs but so good in soup)
2 Tb better than bouillon chicken base
1 tsp Basil
1 tsp Thyme
1/2 tsp Onion powder
1/2 tsp Poultry seasoning
Salt and pepper
Boil chicken in broth with extra water added to cover all of the chicken. Once chicken is done remove from broth and set aside to cool.
In the broth add celery, onion, carrots, mushrooms, kale, cabbage, corn, and seasonings. Bring to boil, boil for 10-15 mins and turn down to simmer let cook for 30 mins.
While you’re waiting remove meat from bone and chop up.
After 30 mins add all or some of the chicken to the pot. Remove from heat and it’s ready to serve.
