Beer Bratwurst topped with roasted Red Cabbage and sliced Apples

I wanted to try something different and honestly wasn’t sure if I would like this flavor combination or not. But I had all the ingredients on hand and it’s a super easy recipe that allows me to make it for a hungry family on a busy weekday.
This dish has everything… the yummy cabbage mixed with just a bit of vinegar cuts the fat of the sausage and the sweetness of the apple pairs so nicely with the cabbage mix. I would definitely make it again, but maybe cut the cabbage up a little more coarsely as I ate mine without a roll. A thinner slice seems more ideal to use with a bun to make it easier to eat.
I used Roma Beer Brats for this recipe a Baltimore, MD based company that prides themselves in producing the highest quality products and small batch made sausages. It’s a favorite brand for this MD girl!
Beer Bratwurst topped with roasted Red Cabbage and sliced Apples
2 1/2 -3 cups shredded Red cabbage
1 Med Red Onion
2 TB Olive Oil
Salt
Pepper
2-3 tsp Apple Cider Vinegar
2 TB chopped fresh Parsley
4 Roma Beer Brats
Dijon Mustard
Thinly Sliced Red Delicious Apple
Preheat Oven to 350’. Toss Cabbage, Onion, Oil, salt, and pepper on a rimmed baking sheet. Spread evenly on the pan and top with the Bratwurst. Bake till Bratwurst is done and Cabbage is tender approximately 30 mins.

Remove Bratwurst and set aside. Add vinegar to the cabbage and mix together till we’ll coated.
Serve Bratwurst with the cabbage mix with some sliced apple and a side of Dijon mustard.
This can also be served on a low carb roll.
