Low Carb Taco Dip Salad with Himalayan Salt Tortilla Chips

Ok... I seriously outdid myself on this one and surprised myself on how good this was...! This is a winner whether you’re eating Low Carb or not. My daughter raved about it, made my heart happy!


Low Carb Taco Dip and Himalayan salt Chips.... every bit of it is low carb. I made the chips and my own Taco seasoning. The entire meal has about 8-10 carbs total and that’s cuz I added a little refried beans on the bottom and had extra chips.

I really believe the secret to any dish is choosing really good ingredients.

Chipotle refried beans, my own taco seasoning, heirloom cherry tomatoes, fresh green onions, fresh spinach leaves, Vermont sharp cheddar cheese...


Taco Seasoning Mix


2 tbsp Chili powder

1 tbsp Cumin

1 tbsp Sea salt

1/2 tbsp Black pepper

1/2 tbsp Smoked paprika (or regular paprika if you don't have smoked)

1 tsp Dried oregano (or dried cilantro)

1 tsp Garlic powder

1/2 tsp Onion powder

1/8 tsp Cayenne pepper (or 1/4 tsp if you like spicy)


Stir all ingredients together. Store in an airtight container. I store mine in the fridge.


How to use taco seasoning mix: Brown the ground beef first. Then, add 2 tbsp seasoning and 1/2 cup water per pound of meat. Simmer until the extra liquid evaporates or absorbs into the meat.


Creamy Taco Dip


1 8oz Pkg softened cream cheese

1 cup sour cream

1/4 cup Mayo

1-2 TB Taco Seasoning


Mix together well and refrigerate while cooking taco meat.
