Low Carb Chicken Pizza Crust #2

Lots of long days this week! So I was looking for something fairly easy to make for dinner tonight so I wouldn’t be tempted to order out.

I decided on....

Chicken Crust pizza.

It turned out pretty good! Texture was good and satisfying for someone missing pizza. Lol

I made one with traditional pizza toppings and the other was more of a Chicken BBQ with sugar free BBQ sauce. Both were really yummy!


I would probably add less Parmesan to the crust and maybe a little more cheese on top. This is a keeper recipe!


Chicken Pizza Crust


1 pound ground chicken thigh (more flavor/fat than ground chicken breast)

1/2–3/4 cup grated (powdered) Parmesan cheese

1/2+ cup shredded Parmesan or Mozzarella

Salt, pepper to taste


1. Preheat oven to 400 degrees

2. In large bowl mix ground chicken thigh, cheese and seasoning

3. Line baking sheet with parchment paper and press chicken mixture into even thin layer

4. Bake for 20 minutes

5. Remove from oven( I did need to drain some juice from the chicken cooking)

6. Top with desired toppings

( A. red onion, bacon, mozzarella, cheddar, and sugar free bbq sauce

B. Mozzarella, Raos pizza sauce, pepperoni, mushrooms, and fresh basil)

7. Bake for an additional 10-15 minutes until cheese is melted and brown
