Low Carb Chicken Lettuce Wraps

What was for dinner tonight?

Low Carb Chicken Lettuce Wraps.... so good! It’s one of my favorite meals. So happy to be able make it low carb!

I first had lettuce wraps at PF Chang’s a few years ago. They were so good if I wasn’t in public I might have thought about licking the plate. Lol.

These are really good and are a lighter option, the sauce isn’t as thick or sticky.

Low Carb Chicken Lettuce Wraps

1 TB olive oil

1/2 c red onion

1 TB sesame oil

1 lb ground chicken

1/4 c Premier Japan Hoisin Sweet Asian Sauce

1 TB Soy sauce

1 tsp Rice vinegar

1 TB Old Bay Hot Sauce (I didn’t have Siracha on hand)

1 tsp fresh minced ginger

8 oz can diced water chestnuts

1 bunch green onion

1 cup shredded cabbage and carrots (Cole slaw mix)

Salt and pepper

Butter lettuce leaves

1. Heat olive oil in large skillet. Add in diced onion and cook until softened.

2. Now add ground chicken and sesame oil. Cook until chicken is no longer pink

3. Combine Hoisin, soy sauce, rice vinegar, hot sauce, ginger, water chestnuts, and green onions. (Reserving some to top the wrap)

4. Heat through and then season to taste with salt and pepper.

5. Fill butter lettuce with chicken mix, top with green onion, and shredded arrows and cabbage.

6. Serve and Enjoy!!

Makes about 8-10 wraps depending on size of wrap. Approximate Total carbs for the dish 64, so 6-8 carbs per wrap. Water chestnuts are the bulk of the carbs you could reduce by replacing with nuts.
