Low Carb Meatloaf by Renee

Stick to your ribs, meat and potatoes, very satisfying, flavorful meatloaf...there is nothing better for a home cooked Sunday dinner! I’ve made multiple variations of meatloaf throughout my life... I’ve used Lipton onion soup mix, I’ve used stove top stuffing, added vegetables, but this one is my all time favorite. I’ve tweaked it over a few years and probably still will continue to evolve the recipe. However, this is delicious just the way it is... This is one of my family’s favorite recipes, especially the leftover meatloaf sandwiches the next day. There’s always a race to see who gets the end piece with all the caramelized BBQ sauce. 2 eggs

1/4 c chopped yellow onion

1/3 c beef broth (can add Better than Bouillon Beef Base for deeper flavor)

1 TB dried parsley

1 TB dried oregano

1 TB dried basil

1 TB McCormack Hamburger Grillmates

1 tsp McCormack Perfect Pinch Steak Seasoning

3 shake Lea & Perrins Worcestershire sauce

1 tsp ground cumin

2 lb 80/20 ground beef

3 slice toasted 647 Schmidt Low Carb Bread, top crusts removed

1/2 lb sliced bacon

1/2 c G Hughes Sf barbecue sauce


Directions Preheat oven 350’. In a large bowl combine all ingredients except bacon, beef, bread, and BBQ sauce. Let sit for 5 mins or while you toast and crumble the bread. Add ground beef and crumbled bread to large bowl and mix well. Mix with a wooden spoon and resist the urge to mix it too much. Mixing with your hands and mixing too much can cause it to become too tough and remove the needed fat from your mixture. In a baking dish place 1/2 the bacon in one layer on the bottom of the dish. Form into a loaf. I make my loaf a bit flat and not so domed so it cooks more evenly in the center. Place in a baking dish on top of the bacon strips. Bake uncovered for approximately 45 mins. Cover loaf with BBQ sauce and other half of bacon, continue baking for 20-25 mins. Remove from oven and let rest for 10-15 mins. This is such an important step, if you don’t let the juices rest and cut the loaf too early the juices will be released into the pan and cause your meatloaf to become dry.
